Recipe: Tian of vegetables and skate fillets
Ingredients for 4 servings
- garden vegetables if possible
- 1 beautiful zucchini sliced
- 1 beautiful eggplant sliced
- 2 large onions sliced
- 2 large tomatoes sliced
- 1 beautiful green bell pepper seeded and sliced
- lemon thyme and garlic degerminated and chopped
- For the skate
- 14 oz (400 g) of skate just poached and shredded
- garlic capers and olives sliced
- olive oil and Espelette chili powder
Step-by-step directions
1 On the removed oven tray arrange all your vegetables in strips
salt pepper season with chopped garlic and lemon thyme if you have drizzle with olive oil direction to mid oven heated to 320°F (160°C) (th5+) for 30 minutes.
2 While this is happening let's take care of the skate.
In a pan pour a good splash of olive oil then when it is hot add your shredded skate salt pepper then while sautéing for 5 minutes add the garlic capers and olives then turn off the heat and cover.
3 There your vegetable strips are cooked so scatter your skate over them and put back in the oven for 5 minutes then turn it off and let rest for 15 minutes.
You can also do as I do cook on a "Kamado" with gentle heat.
