On Saturday, March 14 at 6:34 a.m., rivers and bodies of water in Lot will welcome many trout fishermen to their banks.
Each year, this event brings together several thousand practitioners throughout the department and symbolizes much more than a simple act of fishing: it embodies the return to the banks, the arrival of spring, privileged moments in nature and magnificent moments shared with family or friends, along the water!

6 wild trout (Fario type) from 7.75 oz (220 g) to 9 oz (260 g) gutted through the gills, cleaned and dried
4.5 oz (130 g) of farmhouse butter with a drop of rapeseed oil
Step-by-step directions
1 On your work surface salt and pepper your trout then pass them through flour, patting to remove excess. 2/ In a large pan place 2.8 oz (80 g) of butter with a few drops of oil then brown the trout on both sides 5 minutes each side then turn off your heat, cover and leave it like this. 3/ In another pan without fat toast 3.5 oz (100 g) of sliced almonds then set aside on paper towels. 4/ When you are ready to serve line up your trout on a nice hot plate then reheat your pan melt your 1.75 oz (50g) of butter, add your almonds then a little vinegar or fresh yuzu juice and pour boiling over your trout. Serve for example with new potatoes from Ré cooked in steamed seawater good recipe and enjoy... Of course if you are lucky enough to go fly fishing on a boat on the magnificent Lake Pavin or other mountain lakes you may one day have the chance to catch a splendid and exceptional arctic char for which this recipe would be most suitable.
