Ingredients
- 150 g flour
- 60 g parmesan
- 80 g butter
- 2 eggs
- 2 packets baking powder
- Basil
- 100 g Dried Tomatoes (they now sell them vacuum-sealed in the spice section of the supermarket, which helps avoid making cookies that are too greasy!)
Preheat oven to 240°C
Mix flour, parmesan, and baking powder in a bowl
Add eggs
Mix
Add melted butter and basil
Mix
Add dried tomatoes, previously cut into small pieces
Mix
Form small balls of dough and flatten them slightly
Place them on the oven rack covered with parchment paper
Bake for 10-15 min at 240°C
Best enjoyed while still warm, it's even better!
