Ingredients for 4 servings
- 500 g whiting fillets
- 4 Bintje potatoes
- 1/2 bunch parsley
- 75 g butter
- 2 tablespoons olive oil
- 2 eggs
- a little flour
- 1 medium onion
- Salt, freshly ground pepper
1- Cook the potatoes in their skins in salted water for 30 minutes (12 minutes in a pressure cooker), then peel them once cooked.
2- In a food processor, blend the raw whiting flesh, potatoes, eggs, 1 teaspoon salt, pepper, parsley and onion into a puree.
3- Using the puree obtained, form balls the size of an egg, flatten them and coat them in flour.
4- In a pan, heat the butter and the remaining oil.
5- Add the balls to brown over medium heat without crowding them, 5 minutes on each side.
6- Serve immediately
