1- To cook the semolina, heat the milk with
a pinch of salt, the sugar and the grated zest of the orange.
As soon as it boils, sprinkle in the semolina and let it cook
gently for 5 to 7 minutes until thickened.
2- Be sure to stir from time to time with a wooden spatula,
to prevent it from sticking to the bottom.
Then off the heat, incorporate the egg yolks while stirring quickly.
Then pour the mixture into a well-buttered dish and let it cool completely.
3- Shape flat croquettes about a finger thick and
approximately five centimeters long, then pass them through the lightly beaten egg whites,
then through the breadcrumbs.
4- Cook them on both sides in a pan with butter
over moderate heat.
Once well browned, remove them and place them on absorbent paper.
5- Then you will serve them either warm or cold, accompanied
by orange jam that you will have heated in a small saucepan
with a little water or alcohol to thin it slightly.
