Ingredients for 6 servings
- 60 g almond powder
- 2 tbsp pistachio paste
- 30 g flour
- 75 g powdered sugar
- 60 g butter
- 2 egg whites
- 1 tsp bitter almond extract (optional)
- 6 beautiful raspberries just for decoration!
Mix the powders: almonds, pistachio paste, powdered sugar and flour.
Incorporate all the ingredients together well.
Whip the egg whites until soft peaks form, then fold into the powders.
In a saucepan, melt the butter and cook until it has a beautiful hazelnut color but not brown!
Stop cooking by placing the bottom of the pan in a little cold water.
Let cool for a few minutes then add it to the previous mixture without stopping stirring while you incorporate it.
Let this batter rest approximately 30 minutes to 1 hour at room temperature and covered with plastic wrap.
Pour it into buttered molds.
Bake in a preheated 210°c oven for 10 minutes. Monitor the cooking so your financiers don't brown.
Let them cool completely after removing from the oven before unmolding!
