  • 500 g of mashed potatoes (cooked and passed through a vegetable mill but without adding anything).
  • 1 orange peeled to the quick with segments cut into small squares (skin and white removed then with a well-sharpened knife remove the slices)
  • 100 g of butter (2 times 50 g)
  • 2 finely chopped shallots
  • 2 egg yolks mixed with 30 gr of flour
  • salt and ground pepper
