  • 10 cl of good wine vinegar
  • 30 cl of organic or freshly squeezed orange juice
  • 30 cl of prepared veal stock
  • 100 g of Cape Corsica orange jam (if you can find it) or organic bitter orange jam
  • salt and freshly ground pepper.
