- 5 sugar cubes
- 10 cl of good wine vinegar
- 30 cl of organic or freshly squeezed orange juice
- 30 cl of prepared veal stock
- 100 g of Cape Corsica orange jam (if you can find it) or organic bitter orange jam
- salt and freshly ground pepper.
