Ingredients
- 125 g powdered sugar
- 65 g potato starch
- 2 tsp Matcha tea
- 4 eggs
- 1 pinch of salt
- 80 g butter + 10 g (mold)
- 100 g powdered sugar
- 2/4 drops of red food coloring
- 1 tbsp water approximately
1- Separate the eggs.
2- Whiten the yolks manually or with an electric mixer for about ten minutes.
3- Gradually pour in the potato starch and green tea. Mix vigorously and delicately add the melted butter.
4- Beat the egg whites until stiff peaks form with a pinch of salt.
5- Add to the batter in three portions.
6- Pour the batter into a square mold (20-25cm).
7- After preheating the oven (150°C), bake for approximately 35 minutes while monitoring from the outside.
Let cool before cutting the different green tea square pieces.
For the glaze:
8- Mix the powdered sugar with the coloring and add the water.
9- Spread over the green tea cubes, sprinkle with sesame seeds for finishing before enjoying.
