Ingredients for 4 servings
- 8 farm rabbit gigolettes (if possible)
- lemon thyme
- yellow lemon juice
- crushed bay leaf
- walnut oil
- salt and freshly ground pepper
- strong Dijon mustard
1- 2 hours in advance, lay out your gigolettes, salt, pepper, add a bit of lemon thyme and crushed bay leaf, then drizzle with lemon juice and a good splash of walnut oil, cover with film and refrigerate.
2- Heat your griddle to half power then place your 8 gigolettes, drizzle a little walnut oil, resalt a bit and a turn of the pepper mill and lemon thyme, cook gently for 12 minutes, then flip them and repeat the same operations.
3- Then using a brush, coat your gigolettes with strong Dijon mustard and let cook for 15 minutes.
4- Serve on a plate in the center of the table with a good salad, let cool slightly and enjoy these gigolettes by hand, making sure to have paper towels on hand for a truly pleasurable tasting experience.
