Ingredients
- 3 grapefruits (heavy and very firm)
- 1 orange
- 2 eggs
- 50 g powdered sugar
- 1 packet of vanilla sugar
- 60 g ground almond powder
- 30 cl liquid cream
- 2 tablespoons brown sugar
- Wash the citrus fruits, remove the zest from one grapefruit and the orange and grate finely to obtain about 2 teaspoons.
- Peel the grapefruits and orange to the flesh, and separate the segments between the white membranes.
- Reserve separately the juices that flow out for the preparation of the almond cream
- Place the grapefruit and orange segments in small individual dishes (like in the photo for example), pat dry well and leave in the refrigerator during the preparation of the almond cream.
- Break the eggs into a bowl and add the powdered sugar and vanilla sugar.
- Mix vigorously with a whisk until the mixture turns pale, then pour 1 tablespoon of grapefruit juice.
- Then add the ground almond powder, then incorporate the cream and mix to obtain a homogeneous preparation.
- Turn on the oven grill.
- Coat the orange and grapefruit segments with the almond cream and sprinkle with brown sugar.
- Slide the small dishes into the oven and let brown for 5 minutes, watching the cooking carefully.
- Serve straight from the oven
