1- Cut the feet off the mushrooms then rinse them quickly under water, peel them by removing the fine skin on top then remove the feet.
2- Cut the feet into small mirepoix (small cubes)
3- In a small saucepan pour the butter the chopped onions the mushroom feet salt and pepper then simmer gently for 5 minutes then add the white wine and ginger cook for 5 minutes finally the chopped hard-boiled egg and the grey shrimp bring back to a boil then turn off the heat and cover.
4- In a small casserole melt a little butter then place your mushrooms heads down, salt and pepper add the lemon juice then cook gently covered for 10 minutes.
5- Then fill the inside of your mushrooms with the shrimp mixture cook for 5 minutes then let rest for 10 minutes and let rest another 5 minutes.
6- Then carefully turn your mushrooms onto hot plates with the cooking juices around.
a seafood meal for a small dinner for example and which will surprise I am sure your guests upon tasting.
