Ingredients

  • Linguines with clams fresh from the market and topped with samphire:
  • 1 kg clams
  • 400 g dried linguines or 500 g fresh
  • 20 cl white wine (muscadet for example)
  • 2 shallots finely sliced
  • 100 g samphire just rinsed
  • 50 g salted butter
  • coarse salt and freshly ground pepper
