Ingredients
- 3 eggs
- 140 gr sugar
- Salt
- 20 gr honey
- 160 gr flour
- 5 gr baking powder
- 125 gr butter
- Zest of one lemon
- 1 packet vanilla sugar
1/ For the batter I mixed 3 eggs with 140gr of sugar, a pinch of salt and 20gr of honey. I whisked everything until pale and doubled in volume.
2/ Then I added 160gr of flour and 5gr of baking powder and mixed. I then poured in 125gr of melted butter and the zest of half a lemon and added vanilla then chilled for at least 2 hours.
3/ I buttered and floured molds then put a spoonful of batter in each cavity.
4/ I preheated my oven to 240°, put them in and immediately lowered to 200°. I let them bake 4-5min then lowered the oven to 180° and left them for 4-5min.
Be careful, still watch your oven as the time may be less or more, it depends on your oven. Take them out of the oven and place them on a wire rack.
If you want some with a chocolate shell, put a square in each cavity, and let the chocolate melt in your turned-off oven. When the chocolate is melted, place your cooked madeleines on top pressing well to coat the underside of your madeleines well and chill.
There you have it, your madeleines are ready to be enjoyed with a good coffee or other hot or cold drinks...
