1- In a pan pour 2 tablespoons of olive oil, heat, then add your eggplant dice, salt, cook 3 minutes, then the pepper dice cook 2 minutes, chopped garlic, then the candied tomatoes, finally for 1 minute your zucchini dice, salt and sprinkle with a little Espelette pepper powder, place your shrimp tails on top then stop the heat keeping covered.
2- Toast your muffin halves and install them in the center of your plates, garnish with the "Riviera" filling, place your shrimp tails on top, install the other part of the muffin in the back then decorate harmoniously around by alternating with a few drops of tomato coulis.
