Ingredients for 6 servings
- 4 dl of liquid cream
- 400 g of plain meringues
- 100 g of chocolate chips
- 150 g of dark chocolate (over 55%) in shavings
- 10 cl of liquid cream
- 5 cl of mineral water
- 5 cl of peppermint liqueur (or syrup)
1- Wrap the meringues in a clean kitchen towel then crush them into crumbs with the flat of a knife and place everything in a large bowl.
2- Pour your cream into a container and place in the freezer for 8 minutes. Remove it then with a whisk (electric if possible) whip it into stiff peaks.
3- Using a wooden spatula, fold the crushed meringues into the whipped cream by cutting and lifting, then fold in the chocolate chips in the same manner.
4- Pour into a loaf mold (Teflon or flexipan) then place in the freezer for 6 hours.
1 hour before serving, remove your mold and place it in the refrigerator then prepare your chocolate sauce:
5- In a saucepan heat the water and liquid cream then at the first boil remove the pan from the heat and fold in the chocolate shavings while stirring with a whisk, add the syrup or peppermint liqueur then keep warm in a water bath
Presentation
Dip your mold 10 seconds in hot water then unmold the parfait onto your work surface, cut 6 thick slices or 12 thinner ones using a knife dipped in hot water between each cut.
Serve on nice cold plates with the chocolate very hot poured all around and in a gravy boat for the rest.
