  • 1 small loin of Albacore Tuna (White) belly of approximately 600 g
  • 3 garden carrots of different colors and varieties (except black) peeled and cut into mirepoix (small cubes)
  • 1 garden tomato blanched and cut the same way
  • 150 g of Pancetta or smoked bacon cut very thin
  • a few fresh sage leaves
  • a few fresh or canned glasswort
  • 1 onion thinly sliced and gently caramelized in butter
  • olive oil
  • half-salted butter
  • salt pepper and soy sauce
