Ingredients for 4 servings
- 200 g of sugar
- 35 g of flour
- 6 free-range eggs
- 0.5 l of whole milk
- 1 pinch of salt
- 1 vanilla pod
- ground cinnamon
- 3 tablespoons of lemon juice
- 1 homemade puff pastry
1/ In a saucepan, put the milk and the vanilla pod cut in half with the scraped grains inside and bring to a boil, as soon as the milk boils remove the saucepan from the heat.
2/ Remove the vanilla pod from the saucepan
3/ Pour the milk into a mixing bowl in which you will have previously mixed the flour, sugar and salt.
4/ Add 5 egg yolks, 1 whole egg, lemon juice, a little ground cinnamon and mix everything together.
5/ Spread pieces of puff pastry in small individual round molds and using a pastry bag or small ladle pour the preparation into the molds.
6/ Bake for approximately 10/12 minutes (watch the surface of the custard tarts, they should be golden with a slight burnt appearance) at 200/210°c (thermostat 7).
