1- Hollow out the apples.
2- To prevent your apples from collapsing, at the middle height of the fruit draw a groove in the skin with a sharp knife in a circle all around.
3- Cut your brioche toasts into rounds using a pastry cutter or a bowl, the same size as the base of your apples then place them in an oven-safe dish (earthenware or porcelain).
4- Split your vanilla beans in half lengthwise then in 3 pieces widthwise and plant the 3 small segments in each apple.
5- Preheat the oven to 180°C.
6- Place your apples on your toasts then fill them halfway with your spice mixture, add a small piece of butter and complete with the rest of the mixture which should overflow slightly.
7- Bake for 40 minutes and from time to time pour a spoonful of water and baste your apples with the caramel.
Serve your baked apples lukewarm or cold on a nice plate with contrasting color then close your eyes and let your memories take over!
