1- bring the orange juice to a boil then add the raisins, bring back to a boil and let rest covered on the side for 30 minutes.
2- put in a saucepan your jurançon* the star anise the 1/2 lemon juice and the pinch of cinnamon then, at boiling point add your apple quarters and your mixture of raisins and orange juice.
3- cook for 8 minutes, then remove from heat and let rest covered for 30 minutes. transfer to a large salad bowl.
4- arrange harmoniously with a skimmer your apples and raisins in each glass (don't forget to remove the star anise) then fill with a ladle the liquid in each glass.
put in the fridge for a minimum of 30 minutes.
serve very cold with a small tuile for example.
* jurançon can be replaced with loupiac, sauternes or even late harvest alsace wines in short all wines that are a bit overripe.
