1- In a large pan heat a good splash of olive oil with a knob of butter then when it is very hot place your wheels and garlic petals salt and pepper sprinkle with thyme and let cook 3 minutes, then turn them over, season the same way cook 3 minutes then turn off the heat and cover to let rest for 10 minutes.
2- Then transfer to a plate with a garlic petal on each piece then keep warm in an oven heated to 80°C (gas mark 3)
3- Put your pan back on the heat with the juice released by your wheels, then pour in your bean sprouts and soy beans or broad beans pepper but do not salt, after 1 minute add a good splash of soy sauce that's all ready.
4- On very hot plates, place your soy mixture in the center, the wheels arranged around and between the slices of lomo.

*Lomo is a Spanish specialty it is a pork fillet marinated then dried for a long time just pure delicacy.
*Clean: rinse under running water to remove all impurities.
