Ingredients for 6 servings
- 1 kg fresh sausage
- 5 large garlic cloves
- 4 tbsp peanut oil
- 3 tomatoes
- 1 large onion
- 1 tsp thyme
- 1 tsp turmeric
Chop the garlic and onion.
Cut the sausages into large slices.
Chop the tomatoes into puree.
In a wok, a cast iron pot, or a saucepan heat the oil and cook the sausage over medium heat to brown it well.
Then, add the chopped garlic and onion,
stir and let simmer for 10 minutes.
Add crushed pepper, thyme, turmeric and tomato puree, cook over high heat for 10 minutes stirring from time to time.
Add spring onion tops (also called white onion, young onion) before serving.
Serve with Basmati rice
