1- Preheat the oven to 200°C.
2- Peel the onion and chop it very finely
3- In a bowl, mix the meat, 1 beaten egg, the breadcrumbs, the mustard and the oregano. Add the paprika, salt and pepper and knead the mixture well
4- Place the mixture on plastic wrap, fill with ham and gouda.
5- Roll the mixture and place it on a parchment paper sheet in an oven-safe dish.
6- Wash the potatoes, peel them, grate them.
7- Mix them with the other beaten egg, salt lightly.
8- Cover the top of the roll, pressing firmly and bake for 60 minutes.
9- After 40 minutes of cooking, place a sheet of aluminum foil on top so the potatoes don't burn.
** You can also add gherkins, cut into very small dice, and add them to the mixture
