Ingredients for 6 servings
- 2 large ripe Charentais melons weighing 600g to 700g
- 20 cl of whole milk, very cold
- 110g of icing sugar
- a splash of vodka (optional)
We will start by preparing our melon shells
1- Using a sharp knife, cut the top of the melons (about 5 cm below the stem) then keep these 2 small caps aside.
2- With a spoon, remove the seeds they contain.
then remove all the flesh while avoiding damaging the shells.
reserve the melon flesh without seeds, shells and caps in the cold.
Making the melon sorbet
3- In a thick-bottomed saucepan put a drop of water then the milk, pour the icing sugar bring everything to a boil while stirring then transfer to a bowl and let cool.
4- Pour into a bowl then blend for 5 to 6 minutes the melon flesh to obtain a puree, then pour the cooled preparation, add the splash of vodka then blend again for 20 seconds.
5- Transfer to your sorbet maker and wait for your sorbet to become creamy (depending on the machines from 20 to 40 minutes approximately)
Finishing
Take your shells out of the fridge, place them on bowls so they stand upright then with a piping bag or spoon fill them with your sorbet then top them with their caps.
Serve for example decorated with red fruits buried inside.
you can enjoy your melon sorbets now or store them in the freezer, at which point don't forget to take them out half an hour before your meal.
