Ingredients for 4 servings

  • It can weigh between 300 to 800 g.
  • Roasted Pineapple tomato and bouchot mussels for 4 people:
  • 2 beautiful untreated "Pineapple" tomatoes from the garden if possible, 300 to 400 g
  • their stems removed and cut in half lengthwise.
  • 2 or 3 heirloom tomatoes, their stems removed, blanched and then cut into large chunks
  • 3 cloves of garlic, germ removed and cut into fine slices
  • 24 bouchot mussels, well cleaned
  • salt and ground pepper
  • thyme (lemon thyme if possible)
  • olive oil
