Ingredients for 6 servings
- 150 grams of mascarpone
- 100 grams of St Môret
- 250 grams of strawberries
- a few kiwis and strawberries (or other fruits)
- 3 eggs
- 4 tablespoons of sugar
- 6 ladyfingers
1- Blend all of the strawberries (except 3 strawberries), then add half of the sugar (to obtain a coulis).
2- Whisk the mascarpone and St Môret with the egg yolks and half of the remaining sugar (to obtain a mousse).
3- Beat the egg whites until stiff peaks form and fold them into the mousse gently.
4- Slice the 3 remaining strawberries into thin slices.
5- Cut the ladyfingers according to the size of the glasses and place them at the bottom of the glasses.
6- Cover with coulis, mousse, strawberry slices up to about 1 cm from the edge.
7- Refrigerate for a few hours.
8- At serving time, decorate the plate with kiwis cut into pieces (or other fruits) as well as with the remaining coulis.
