Halfway between a light dessert and a generous mousse, this Bavarian plays on the contrast between the freshness of red berries and the vanilla-sweetened cream. Strawberries and raspberries wrapped in an airy jelly, to be prepared the day before.
Ingredients for 6 servings
- 2.1 cups (500 ml) whole milk
- 6.75 oz (190 g) caster sugar
- 1 vanilla pod split in half or a little vanilla extract
- 8 sheets of gelatin
- 2.1 cups (500 ml) liquid cream
- 8.75 oz (250 g) strawberries just washed and dried, cut into large dice
- 8.75 oz (250 g) raspberries hulled
- Strawberry coulis or crème anglaise
