Recipe: Basque Cake
Ingredients for 6 servings
- 2 farm eggs
- 4.4 oz (125 g) of creamed butter
- 4.4 oz (125 g) of caster sugar
- 1 packet of vanilla sugar
- 1 small packet of baking powder
- 2 grains of salt
- 8.75 oz (250 g) of flour
- The cream for the inside:
- 2 egg yolks
- 2.25 oz (65 g) of caster sugar
- 1.4 oz (40 g) of flour or cornstarch
- ¼ liter of whole milk
- 1.75 oz (50 g) of "organic" almond powder
- Egg wash
- 1 yolk mixed with a little water
- 2 to 1 fl oz (3 cl) of rum (optional)
Step-by-step directions
1 The day before:
Prepare the dough and cream.
The dough:
Reduce the 4.4 oz (125g) of creamed butter (very soft) then add the sugars and whisk well, then add the eggs and finally the flour mixed with baking powder, make a ball and refrigerate it covered with plastic wrap.
2 The cream:
Bring the milk to a boil with a packet of vanilla sugar or a vanilla pod split in half.
Meanwhile in a bowl, place the yolks, add the sugar, whiten slightly and finally add the flour.
When the milk boils, pour it over your mixture. stir and return to your pot on the heat, never stopping stirring with your whisk, after 2 minutes of boiling transfer to your bowl, sprinkle with a little powdered sugar (to avoid forming a crust) and let cool.
