An original aniseed and lemon cake. For lovers of anise flavors who want a cake that's not too sweet. You beat the egg yolks with sugar, then add the aniseed and lemon at the same time. Egg whites beaten to soft peaks, olive oil that enriches without weighing it down. Bake for 35 to 40 minutes at 180 °C, a tender cake with a light crumb.

3 eggs
8.75 oz (250 g) sugar
8.75 oz (250 g) flour
1 lemon zest
1 packet baking powder
1.4 oz (40 g) milk
1 tsp green aniseed
3 tbsp olive oil
Step-by-step recipe
1 In a mixing bowl, beat the three egg yolks with the sugar.
2 Add the lemon zest, the milk, and the aniseed, then stir the mixture.
3 Add the flour and baking powder, work everything together, then fold in the three egg whites beaten to soft peaks.
4 Pour in the olive oil and stir.
5 Preheat the oven and bake at 355°F (180 °C) until the batter is cooked through.
