A recipe from grandma Hélène of Port-Louis. This lobster à la Lorientaise was prepared by the grandmother of one of our visitors who had the kindness and excellent idea of sending it to us. Since it was noted in snippets in her recipe notebook (over 50 years ago), I've reworked it a bit so that all of you can revive this lovely recipe

Ingredients for 4 servings

Lobster with curry for 4 people:
  • 1 beautiful live lobster approximately 2.6 lb (1.2 kg)
  • 2 carrots
  • 2 onions
  • 2 tablespoons flour
  • 3 glasses dry white wine
  • 2 tablespoons tomato concentrate
  • 1 bay leaf, thyme and flat parsley
  • 2 teaspoons curry
  • 0.4 cup (10 cl) cognac
  • a knob of butter
  • 3 tablespoons olive oil
