1 In a rice cooker, cook the rice the day before in 2 cups of water with the vinegar and sugar. It's easier this way. Transfer to a container, cover, and refrigerate.
2 Prepare all your ingredients separately.
3 Toast the flaxseeds.
4 Make the omelet with the seaweed, garlic, salt, and pepper. Cut into thin strips lengthwise.
5 To assemble, place the nori sheet shiny side down on a bamboo mat.
6 Spread about three-quarters of the rice over the nori.
7 Create a line of sesame seeds, then one of carrot, one of omelet, one of sprouts, and one of beet.
8 Roll tightly, keeping the ingredients in place.
9 Cut in half, then in quarters. You'll get eight pieces.
10 Make the second roll with the remaining ingredients: sprouts, lettuce, avocado, sesame seeds, carrot, omelet, and beet.
11 Don't be afraid to try different combinations. It's delicious.
Excellent maki recipe. It might be a bit tricky to make due to the variety of ingredients involved.
