Coconut Muffins with Chocolate Center soft and indulgent
Ingredients for 6 servings
- 5 tbsp flour
- 0.2 oz (5 g) baking powder (1 tsp)
- 4 tbsp sugar
- 3 tbsp coconut milk (or regular milk if unavailable)
- 2 tbsp oil (grapeseed)
- 1 large egg
- 3 tbsp shredded coconut
- 6 squares of 56% dark chocolate
Step-by-step recipe
1 Preheat oven to 180°.
2/ beat the egg with sugar until the mixture whitens.
3/ Add the oil and mix.
4/ Add the flour and baking powder, mix again then add the milk and coconut to the batter.
5/ Pour half of the batter into the muffin cups, add one square of chocolate to each, cover with the remaining batter and bake for approximately 1/4 hour.
For decoration, at the end of baking sprinkle a little shredded coconut and unsweetened cocoa on top.
