Dandelion is also called lion's tooth or false chicory. Last Sunday, on Palm Sunday, you may have taken a little walk in the surrounding fields and perhaps also picked the first spring dandelions? Here is the classic recipe for preparing them.
First, a bit of history. You are no doubt aware that this plant has a particular property as a powerful diuretic effect. Thus the « good folk » gave it the name « Piss-in-bed ». You will see in my comments that I would prefer you to pick them in virgin fields, because indeed the acidity of the urine of animals and humans too might not suit them, just as it might not suit you, since even after passing through it remains in their texture.
Faster than egg mayonnaise, lighter than a lukewarm salad: warm dandelion salad with bacon is a 15-minute dish that stands on its own. The bitter dandelion leaves yield to the heat of smoking bacon and vinegar. That's it.
Ingredients for 4 servings
- 17.75 oz (500 g) of dandelion greens, peeled away from « wet areas » (smile), washed three times
- 1 clove of garlic, halved and germ removed
- 2 tablespoons of good wine vinegar
- 1 hard-boiled egg, shelled and passed through a sieve (crushed)
- 8.75 oz (250 g) of country bacon, rind removed, unsmoked, cut into small lardons
- fine salt and freshly ground pepper
