10.5 oz (300 g) of young green beans trimmed and rinsed
5.25 oz (150 g) of small chanterelles stems removed and just wiped
vinaigrette:
1.4 fl oz (4 cl) of cider vinegar
0.3 cup (7 cl) of hazelnut oil
fine salt and freshly ground pepper
half-salted butter and rapeseed oil
fresh herbs or spring onion greens
small "cherry" tomatoes from the garden
Step-by-step directions
1 Pour 5.25 qt (5 liters) of water into a large pot and add a handful of coarse salt. When boiling, add your beans and cook for 7 minutes after the water returns to a boil.
2 Meanwhile, in a frying pan, add a generous knob of butter with a little oil. When hot, add your chanterelles, salt and pepper, and let them cook for 5 to 6 minutes, then remove from heat and cover.
3 Drain your beans and plunge them into ice water, then place in a colander.
4 In a salad bowl, pour the vinegar and oil, salt and pepper, stir, then add your beans and mix well.
5 Add your fresh herbs on top of your chanterelles, then arrange them slightly pressed into your bean salad and arrange your small "cherry" tomatoes around it.
