Chestnut soup for 4 people:
  • 14 oz (400 g) of chestnuts
  • 1 leek white
  • 7 oz (200 g) of celeriac (1 piece cut from the bulb)
  • 5.25 oz (150 g) of carrots
  • 1 crushed star anise
  • 2.1 oz (60 g) of butter
  • 0.8 cup (20 cl) of 30% liquid cream
  • salt and ground pepper
