Ingredients for 4 servings
- 1 onion
- 1 bunch of chives
- 100 g (3.5 oz) white button mushrooms
- 100 g (3.5 oz) brown Paris mushrooms
- 1 tbsp lemon juice
- 4 tbsp lemon mayonnaise
- approx. 1 tsp tabasco
- herb salt
1 chop finely the onion.
2 Chop the chives. Reserve a little of each for finishing.
3 Clean the mushrooms. Reserve 1 of each for finishing, cut the rest into small dice.
Drizzle immediately with lemon juice and mix. Add the mayonnaise, onion and chives. Mix everything together.
4 Season with tabasco and herb salt.
5 Toast the bread then make breadcrumbs.
6 Cut the reserved mushrooms into slices.
7 Plate the tartare on plates using a 6cm ring, pressing down with a spoon.
Decorate with breadcrumbs, chives, onion.
Nice recipe, although not quite a tartare, I would prefer thin slices of raw marinated scallops on this "Tartare" served with the breadcrumbs, but everyone has their own taste.
