Ingredients for 5 servings
- 500 g of fresh cheese
- 150 g of butter
- 50 g of flour
- 50 g of breadcrumbs
- 3 eggs
- Salt
1- Drain the fresh cheese.
2- Melt 50 g of butter in a double boiler.
3- In a bowl, mix flour, salt, eggs and cheese. Add the 50 g of melted butter and work everything together to obtain a homogeneous paste without lumps.
4- Bring a large pot of salted water to a boil.
5- Take the paste with a tablespoon, dip it into the boiling salted water, each spoonful will form a ball.
6- Remove the balls as they rise to the surface of the water. Drain them in a strainer, if they are stuck together, separate them.
7- Prepare a plate with breadcrumbs, and roll each ball in it.
8- Heat the remaining butter in a pan over medium heat, put the balls in and brown them for approximately 3 minutes. The balls should be firm on the surface and tender inside.
For a side dish, or, spiced, for an appetizer, in which case, add to the mixture pepper, Espelette pepper, crab meat pieces, garlic, chives... as you like, anything is possible!
