Ingredients for 4 servings
- 250 gr of onions
- 500 gr of beef (from the shank)
- 250 g of tomatoes
- 1 tsp of paprika powder
- 1 tsp of thyme
- 1/2 cube of lean beef stock
- 1 dl of yogurt
- Butter
- Parsley
- Salt and pepper from the mill
1/ Take a casserole with a lid.
Cut the onions into thin slices and brown them in butter.
2/ Then add the meat cut into dice, season with pepper and salt.
3/ When the meat is seared, add the tomatoes peeled, seeded and cut into pieces (dip them 30 seconds in boiling water to remove the skin easily).
4/ Sprinkle with paprika and thyme. Add the 1/2 stock cube, this will enhance the flavor.
Let simmer, on low heat, for 2 hours, casserole covered.
5/ Stir from time to time and, if there is not enough liquid, add a little water.
6/ When the meat is well cooked, add the yogurt and mix. Sprinkle with chopped parsley.
Serve with pasta, rice or fries.
Can also be cooked with pork.
