Ingredients for 8 servings

  • For once, I will give the classical recipe, as the school manuals (Planche et Sylvestre) were teaching us, such a long time ago. Those 'Greek style' ("à la grecque") mushrooms are still those I control from cook students during final school examinations.
Greek style mushrooms for 8 persons :
  • 1.2 kilgram (2.6 lb) white and not too big button mushrooms
  • 200 grams (nearly 1/2 lb) small young peeled onions or one big onion peeled and thinely chopped
  • 1/10 liter (3.3 fl oz) olive oil
  • 1.5/10 liter (5 fl oz) dry white wine
  • 2 lemon juices
  • a few parsley stalks + thyme + 1 bayleaf all wrapped together with a thin string ("bouquet garni" in French)
table salt
  • 12 white pepper seeds + 12 coriander seeds
