1- In a heavy-bottomed casserole dish, pour 2 tablespoons of olive oil.
2- When it is very hot, pour all the garnish ingredients, salt and add the turmeric.
3- Covered, gently stew for 30 minutes and test the seasoning.
4- Meanwhile, in a large pan heat 2 tablespoons of olive oil then carefully pour in your squid, high heat for 8 minutes then drain them* and add them to your garnish for just 5 or 6 minutes.
Plate carefully with the olive slices around.
*This juice can be used to season pasta, rice, pilaw, or risotto.
