recipe progression
1- in a large bowl, mix grated potatoes, cheese cubes, chopped chives, salt, pepper and nutmeg. cover with plastic wrap and refrigerate for 15 minutes.
2- then heat a small blini pan with a little oil (several pans if you have them). when the oil is very hot, add 2 or 3 spoonfuls of your mixture.
3- brown quite strongly for 2 minutes, flip them and cook for another 2 minutes, then cook gently for 4 minutes. you can serve with a nice salad of corn salad for example but you can especially cut them into small pieces (like camembert) and stick a small wooden pick in each one that you will pass around as appetizers. you can prepare them the day before and just reheat them in the oven when your guests arrive.
