Ingredients for 6 servings
- 120 g flour
- 80 g grated parmesan
- 140 g softened butter
- 6 tomatoes
- 1 goat cheese log
- fresh basil leaves
- freshly ground pepper
1- wash and blanch the tomatoes. remove the seeds then cut into small cubes and sauté them in a spoonful of olive oil then
add the chopped basil, fine salt and freshly ground pepper.
simmer for approximately 15 min.
2- cut the goat cheese log into slices about 1 cm thick
3- preparation of the crumble mixture:
in a salad bowl, mix the flour and parmesan make a small well then add the butter cut into cubes. knead everything together.
set aside.
4- in individual ramekins, put the tomato mixture.
cover with goat cheese slices.
then cover with the crumble mixture.
5- bake for 15-20 min in the oven at 180°C (gas mark 6).
the crumbles are cooked when the top is golden.
