Ingredients for 4 servings
- 3 Red Peppers
- 3 Yellow Peppers
- 2 Slices of Chorizo
- 1 Garlic Clove
- 50 cl Liquid Cream
- 10 cl Olive Oil
- 300 g Fresh Cheese
- Salt / Pepper
-Peel the peppers using a vegetable peeler, then remove the seeds.
Cut them into thin strips, then melt them in a sauté pan with olive oil and garlic, over low heat for about 25 minutes.
- Let cool, then refrigerate the entire preparation (the peppers and the oil that will have colored) overnight.
- Blend in a mixer, the fresh cheese, about 1/4 of the pepper/oil preparation, a pinch of salt, a pinch of pepper. Keep chilled.
-Prepare a "salted" whipped cream with the 50cl of liquid cream and the colored oil from the peppers, keep chilled.
-Dress in the bottom of your glasses; a layer of fresh cheese preparation, a layer of peppers, and finish with a cloud of whipped cream.
- Dry roast the chorizo slices in a pan, mince them finely then place a few slivers on each glass!
