1- In a bowl break your 2 eggs, add your tablespoon of olive oil and your 2 tablespoons of mustard, pepper (no salt) then mix everything for 10 seconds and set aside.
2- Lay out your whiting fillets in front of you, salt and pepper.
3- Then prepare 3 plates: 1 with the flour, 1 with the beaten eggs and finally 1 other with the breadcrumbs.
4- First coat your fillets in flour then dip them in your beaten eggs (English style) and finally in the breadcrumbs.
Arrange them on a small tray and into the freezer for 15 minutes.
5- Meanwhile in a saucepan heat your lentils by adding your sliced garlic and sauté your small lardons again keeping them warm.
6- After 15 minutes in the freezer, melt your butter and your tablespoon of olive oil in a pan (non-stick if possible), when everything is foamy, gently place your breaded whiting fillets,
cook them for 6 minutes on each side without rushing.
