Ingredients for 6 servings
- 2 medium pork filet mignons
- 1 mango
- 3 beautiful apples
- 1 tablespoon of curry
- 2 eggs
- 1 dl of liquid cream (30%)
- salt and ground pepper
1/ Peel and cut in half lengthwise without going all the way through the filets mignons, salt and pepper on each side, inside and outside.
2/ Peel a beautiful mango and cut pieces the width of your filet that you will place along the entire length of the filet; place the other filet on top and tie it all together.
3/ Preheat your oven to 180° (th6)
In an oven-safe pot, add a little oil and butter and place your small roasts and brown them on all sides, cover and cook in the middle of the oven for 20 minutes.
4/ Meanwhile, prepare the apple terrines. Start by peeling them then hollowing them out, and grate them into a bowl, add the egg, cream and curry, and a few small pieces of mango, salt and pepper.
5/ Put in oiled ramekins and cook in a water bath for about twenty minutes.
6/ Then unmold and serve with the filets mignons cut into slices coated with the little sauce rendered.
