Ingredients for 4 servings
- 400 g of garden strawberries washed and hulled
- 130 g of red bell pepper cored and cut into small dice
- 1 small spring onion finely sliced
- 4 cl of balsamic vinegar
- 5 cl of olive oil
- salt and a pinch of Espelette pepper
1- In a saucepan pour all your ingredients, salt and add a little pepper.
2- Bring to a boil, remove from heat and let sit 10 minutes covered.
3- Pour into a blender or a small tall bain-marie then blend completely, let cool then cover and refrigerate overnight.
Serve well chilled in nice glasses or verrines, adding at the last moment, small dice of strawberries, if you have time small parmesan crisps will be an excellent accompaniment.
