Ingredients for 8 servings
- 3 eggs (3 yolks and 3 whites)
- 125 g of caster sugar
- 1 packet of vanilla sugar
- 30 g of flour mixed with 45 g of potato starch or cornstarch
1- Whisk (mix with a whisk until the mixture turns pale) the egg yolks with the sugar and vanilla sugar packet.
2- Incorporate the flour and starch mixture that have been sifted together.
3- Heat the oven to 160°C (gas mark 5+).
4- Whip the 3 egg whites until stiff peaks form; incorporate 2 tablespoons into the yolk/sugar mixture with a whisk, then gently fold in the remaining whipped whites by cutting and lifting with a spatula.
5- Pour into a sponge cake mold, Teflon or Flexipan type (24 cm diameter) and bake in the oven for approximately 40 minutes (test with a needle).
