Ingredients for 6 servings
- 1 beautiful farmhouse maroilles
- 4 whole eggs
- 1 dl whole milk
- 15 g baker's yeast
- 230 g sifted flour
- 80 g melted farmhouse butter
- 1 dl liquid cream 30%
- 10 g salt
- 20 g brown sugar
- a pinch of nutmeg
1- In a large bowl pour the flour make a well in the center (fontaine) add the salt, the pinch of nutmeg the brown sugar, the yeast diluted in warm milk, then 2 eggs beaten into an omelette and finally the melted butter, mix well by hand then place in a fairly tall mold (tourtière).
2- Heat your oven to 180°(th 6) then, when it reaches temperature open the oven door and, on the open door (or in front of the oven) place your mold, the dough must then double in volume.
3- Meanwhile peel your maroilles then crush it with a fork. mix it with the 2 remaining eggs then add the cream and pepper (no salt), the whole should have the consistency of a soft paste, then at this moment when your dough has developed, spread this maroilles cream on top and bake in the oven for about 30 minutes.
4- Serve your Goyère au maroilles fresh from the oven with a good green salad or chicory and even better if you find some chicory greens.
