Ingredients for 4 servings
- 100 g of fine sugar.
- 50 g of salted butter.
- 20 cl of liquid cream at 30%.
- 200 g of chocolate here white but you can use the chocolate of your choice.
- 4 eggs
1/ Make the caramel, in a non-stick pan pour the sugar, let it melt at its own pace do not stir it as it may crystallize and it will be ruined, everything will need to be redone!
2/ Once it has a nice caramel color add the butter in pieces and mix well and then do the same with the cream with caution because hot caramel and cold cream the temperature difference causes sparks lol so be careful of splashes and burns.
3/ Add the chocolate in pieces. once melted pour this mixture into a dish and mix everything, keep aside and let cool.
beat the egg whites until stiff.
4/ Add the yolks to the chocolate caramel and then the whites gently.
5/ Put in glasses with feet it is always prettier.
Place in the refrigerator for at least three hours.
When serving sprinkle with a few chocolate shavings.
Hummmmmmmmmm a real delight.
