Tian of Puy Lentils and Foie Gras for 6 people :
  • 400g Puy lentils
  • 1 litre of chicken stock
  • 1 onion, peeled and pricked with 2 cloves
  • 1 carrot, peeled and very finely chopped
  • 3 tomatoes, peeled, seeded and finely chopped
the juice of 1/2 lemon
  • 150g of cooked duck foie gras
  • 1 black truffle (40g), well brushed
some olive oil and blsamic vinegarsalt and freshly ground pepper
